Fizzin’ Fruit

Ice Cream Box is easing away from the nitrous for a moment – here is another use for the gas dispenser, simply swap the cream chargers for a CO2 refill and try this one out… a more detailed recipe can be found here

The idea is basically to make a fizzy, soda syphon beverage – but in solid form – inside the fruit.

In easy steps:

  1. Wash and chop the fruit (bite-size is good)
  2. Pile it into the soda syphon (or cream dispenser)
  3. Charge it up with the gas
  4. Leave for 20 minutes
  5. Slowly release the pressure by unscrewing the head
  6. Pour/spoon out the fruit.

What happens inside the dispenser is that the high pressure gas forces its way inside the fruit (that is a good reason to cut them open) they need a route inside via water – so a grape would struggle to dissolve much gas, unless it was cut open. Given a bit of time the gas will equalize pressure inside and outside the fruit.

When you release the pressure, the gas will try to equalize the pressure again by coming out f the water in the fruit – but it can’t do so immediately so, the gas fruit will stay fizzy for a little while. The colder it is the longer the gas will stay fizzing in the fruit.

The best thing to do is to keep the whole thing cold in the fridge and then serve it straight onto some nice cold ice cream – then listen to the fizzing and cracking as you shovel it all down your gullet!!!
